Hi! It sounds like the mods you had installed are still affecting your sims even though you deleted them. There's a couple of things you could try.
Repair the game. It's in the app under manage.
Your game version number is in a text file in My Documents/EA Games/Sims 4. In the pic below, it's circled in blue. If you click on it, a file will open with your game version number in it.
If repairing the game did not work, the next thing you can try is deleting the files circled in red, so CACHE, CACHESTR, AVATARCACHE.PACKAGE. I forget which one holds the avatars of the sims, but you can safely delete all three files and folders.
Then restart your game and your sims should be back to normal.
Don't reinstall the mods you used, they don't work.
If you can't see all the files and folders or the file types, open File Explorer by right-clicking on the Start icon, open Folder Options, and click 'Show hidden files, folders, and drives'.
These instructions are for Windows 10, but I think Windows 11 should be similar? Hope this helps.
