You can try restoring your saves from your cloud save data on your console. If you were playing offline, your game saves wouldn't resync from the cloud. If the save files aren't available in your cloud, I'm afraid we wouldn't be able to restore them.
Thank you for responding!!!! How would I be able to access my cloud save data? I looked through every option on xbox and in game, but there's no mention of the cloud. Do I delete and re install the game in hopes it would ask me to load data from the cloud?

As long as you're connected to the Xbox Live network, your save content will be automatically stored in the cloud.
Under Manage Game & Add-Ons in your Xbox settings, you'll see the saved data for your games there.
