I'm on the normal version of the game, I have no antivirus installed.
I wasn't aware of the "repair game" function in Origin. I will attempt that now and report back if it changes anything.
I ran the repair game function in Origin and started the game again. This time it took only a few minutes before it started to freeze for a moment before giving me back control. First when moving the camera, the second time when rezising an object to be placed. Right after that the graphic glitch happened again, but this time rather than being completely frozen it would be stuck for ten second or so, before giving me back control for a second, and then freezing again and repeating. Thanks to that, I managed to close down the game rather than have to reboot the entire computer.

Your Mac also has a dedicated GPU too, please provide those details. They are explained in the link.
Could you also please attach your Config.log file to a post here. It is in your Sims 4 folder.
If you move your entire Sims 4 folder to the desktop and allow the game to create a new one, does the crashing still happen in a new, clean game?- 5 years ago

I tested deleting the entire folder, and the game seems to run normally then. I played for about twenty minutes and got no freezes. Is there a specific set of things I can attempt removing from the folder? I'd very much like to keep my settings and saves if possible.

That's great that a new clean game ran ok. You could start by moving out your Mods folder and trashing the localthumbcache.package file, this tests to see if it is a Mod/CC issue.
Next, you could test the saves by moving them all out except for one.
You could also trash the Options.ini file and see if it's something as simple as your in-game graphics options.
