It's in both my documents and the desktop! Should I delete the one on the desktop, or will that get rid of all of my saves? Also, I moved it to my desktop after this issue started to have easier access to it. I just want my saves back 😩.

In the screenshot you provided there are two save files, the ones ending .save. All the rest ending .ver are backups. Are those two save files not able to be loaded from the in-game main menu?
