You have one save and it is in iCloud. In Finder click on Go > Go to Folder in the menu bar and enter this:
~/Library/Mobile Documents/com~apple~CloudDocs/Documents/Electronic Arts/The Sims 4/saves
Then copy or move that Slot_00000002.save file to the local Documents > Electronic Arts > The Sims 4 > saves folder. It may help to already have that location open in a Finder window so you can simply drag and drop the file.
Did this and unfortunately there is nothing in the saves folder. I'll take it that my saves are gone now.

Yes, because you're not looking in the correct location. I gave you the file path and explained how to get there in my previous post. If you choose not to follow my advice I can't help you. If you do navigate to the iCloud mobile documents folder and still don't see it in the precise location I gave you which Terminal states please post a screenshot from Finder with the path bar clearly visible in the Finder window. Your screenshot simply tells me you are in a save folder but not where that saves folder is. If you don't know how to enable the path bar you can read instructions here https://support.apple.com/en-gb/guide/mac-help/mchlp1774/mac
