Could you create a new user account on your Mac and see if it still happens. Don't copy over any saves, keep it as a new, clean game with none of your user data. If you need help setting up a new account you can read this article - https://support.apple.com/en-gb/guide/mac-help/mtusr001/mac

Great! Maybe something else you have running, either an app or maybe a background process, is interfering and causing the crash in the other account. Or it could just be the clean Sims 4 folder. You could move your whole Sims 4 folder to the desktop in your usual user account and see if the game crashes, not sure you tried that?
