What exactly did you do to restore a save? Do you have a link to the instructions you followed?
What do you mean by everything is back to default?

hi, so i used this, https://help.ea.com/en/help/the-sims/the-sims-4/how-to-restore-a-previous-saved-game-in-the-sims-4/ After that i opened the game and it was basically back to the first save, instead of being a load section and a resume game it was just a new game button. Also everything from my gallery is gone

If you didn't get the option to load a game at the main menu the save file you attempted to restore is either not in the right location or is now mis-named so the game cannot load it. Could you please post a screenshot showing the save in Finder and make sure you have show file path enabled in Finder (View > Show Path Bar).- 2 years ago
Im not super tech savvy so i don't exactly understand, when i go via the finder documents > electronic arts > saves nothing comes up as you see in the first picture. If i go via the electronic arts folder on my desk top it shows all of them as seen in the second picture

It really would help if you enabled the path bar at the bottom of the Finder window and showed it in the screenshot but I'll take your word that the screenshots are the location you say they are.
The game will not load saves from a folder on your desktop, it only loads user data located in Documents > Electronic Arts > The Sims 4. Move the saves into that saves folder and they should load.
