You are correct that is the latest. So let's look at repairing it.
Download DDU and follow the instructions to remove the Nvidia drivers. Then reinstall the newest version. https://www.guru3d.com/files-details/display-driver-uninstaller-download.html
Thank you, I removed the drivers and installed a fresh but it still crashed on me this morning while testing it the fix

Try to disable Origin in Game.
Open Origin, rightclick the game and select Game Properties. Remove the check by "Enable Origin in Game...".

Thank you for all your help, it has definitely improved I've gone from crashing every 5 mins to once maybe twice every couple of hours. just wanted to test for as long as possible to check its consistency
Any other ideas?

Try to repair the game rightclick it in Origin and select Repair.
Do you have any Mods or CC? If so move your Mods folder to the Desktop and delete localthumbcache.package. Then test the game.
If it works now check for updates to your Mods and CC. Add it back a little at a time while testing until you have found all that are broken.
