As I suspected, I disabled all mods and fertilized the plant and it stayed intact. I suspect it's the gardening mod that I installed some time back.

Gardening got changed a lot so you can expect all gardening mods to be broken.

I'm pretty sure I got rid of all my gardening mods and I also think I saw people say they had this problem but I had homes that had perfect plants planted and had some produce in their fridge but when I start/load that household, the fridge is completely empty!
