Well because the plant it's creating isn't a dragon fruit. It's just the same as what it was before it just says it's spliced instead.

Do you have any mods or CC (custom content)? If so, did you try the game without it?
No custom content or mods.
I can reproduce this, so moved to the bug forum @Commissar_Maniac
Tried both ways, no success.
Did find online an option to take seeds from a neighborhood plant, rather than bought, and planting those and then crafting. Which might be a workaround.

How is this different than how it used to be? When you splice a plant, the base plant doesn't change. You have to harvest the new plant and plant it to make that the base plant. Or maybe I'm just misunderstanding the problem.
@Pegasyms didn't test that far! Going to look in to that. It has been a while since I've tried grafting plants.

Okay correct me if I'm wrong but if you harvest a spliced plant there's a chance you get any of the fruit that it says it's part of? So with the Strawberry Snapdragon example I could get either of those or I could also get a dragon fruit.

You will find all three on the plant at the same time. A plant can have up to 10 harvestables, so you might get 3 snapdragon, 4 strawberry, and 3 dragonfruit.
