In previous iterations of the sims I've tried to incorporate a bit of religion into my game. Before CL and the park venue with the wedding stuff I downloaded a lot from the gallery with a little chapel for weddings. The whole mythos you create OP is impressive. Amazingly creative. And with the clubs system I could actually see one day creating a religion or cult in game. Holidays even improves that feature.
I too really enjoyed the religious aspects of Medieval. I don't think I'd be opposed to the devs adding a pack with something similar in game, but I can completely understand why they wouldn't.
