"Realistic" sims have a habit of falling right into the uncanny valley, especially when they're in motion. I'll also note here that the two biggest video games nowadays are Minecraft and Fortnite. Neither really makes me think of hyper-realistic graphics.

In the specific case of sims, I'm pretty sure that most of the playerbase doesn't have high end machines. Games that only run on bleeding edge machines tend not to sell as well. Plus, for better or worse, being able to play on consoles seems to be a target now. PC gamers will be able to crank up the eye candy, but the basic engine will have to be able to work on the next generation of consoles.
