Sims Freeplay quests
I am not going to finish the sims stable quest in time. Is there a way to redo it?

no, you can not start over on a quest.
some quests will allow you to buy more time, but so far I haven't seen a prize I wanted that bad, so I have not tried it as it costs real money
the prize for completing the quest within the time is a painting, unless you really really like paintings of unicorns, I wouldn't worry.
