No you just need one. I think the advantage of using them is small, not sure though.

As stoves become higher in *star quality , 1 the lowest 3 the highest ,
the hobbies is finished quicker using 3* while using less energy.
only have 1 stove at a time
, if you have a 3-2-1 stared stove, the sim will go over to to cook on the 1*, or 2* thus taking longer even though you have a 3*** out as well

No , when you level up past 8 the griddler story unlocks .
they do not offer more ovens at level 7 Head start , (at this time) , the next story griddler opens the next stove available under the griddler collection in the home store.
, I have had 2 Sims level out @10 and complete the hobbie twice .

More expensive items break much less often (think higher quality) but cost more to repair when they break.
You only need one stove out (you should use the most expensive one you can afford). You will finish tasks faster and earn money much faster. Once you have reached the level (it might have been 30 or 35, I don't remember) to unlock the griddler collection you do get benefit from having all 3 cooking devices from that collection out (the griddler, the bakemore and the hot stuff stove).
@heartstyle2 The only thing I would add is to make sure you purchase everything the first time they are available and before you retire your SIM or else the items will be locked again until another SIM levels up again in the hobby. That's what happened to me. 😉
