New phone progress lost
I'm linked to the game center and when I click to play Sims it tells me to create a new sim. How do I transfer the data?

Did you log in to the same account? You can try linking it to another account like Twitter or Facebook, or your EA account.
Or play a little through the game to see if the back up option pops up later on.
Make sure to write down the Player ID of the game you've played before though.
