Have you tried making all your sims are idle and then restarting the game? You can also do more comprehensive solution from this thread.

I've tried some of the fixes on that thread, it did not fix the issue. My Sims can start a shift at the Eco Workshop, it is the schedule that is stuck on Saturday. I updated the game and it did neither fix the problem.
