I also love the designing aspect of the game, and the fact that it's a Simpson simulation game makes it even better. I enjoy building very large (100+ sq ft) dioramas in my home as a hobby, so I always enjoy a good design game, lol. I didn't really lol there, but the term seems to be popular with the kids these days.
Back on topic, I prefer large areas for certain properties (mansions, Cletus' farm, etc.) like many, and the land restriction means I don't buy certain premium properties requiring large parking areas. So, I think more land would benefit EA for people who don't buy more with donuts because of this.
I am always tweaking my town, and that's how I play. All of the rest is just icing on the cake.
But yeah, more land and more everything!
