Krusty Burger Oil Rig, wish to have it someday.

The Sunsphere is my favourite - classic episode, easy to place, nice animation and gives the boys tasks that result in them wearing wigs. Love it.

Notice how the most popular ones - Krusty Oil Rig, Sunsphere & Sit 'n' Rotate - are ones with both tasks for characters (well, 2 out of 3), and practical design options?
