I'm finishing up AC2 right now and I am going to give AC games a break and play Bioshock Infinite (my sons been playing it for a few weeks now and I cant wait to get that started). After that I will probably start AC Brotherhood then tackle GTAV later in the fall. Then play AC Revelations and the soon to be awesome AC BlackFlag.
I shouldn't have played ACIII first because it made the first AC game look very lame. I forged ahead and finished it and AC2 is a much better game.
I was one of the few that liked Assassin's Creed at the time and I saw a lot of potential there, but I defintiely think it would be hard to go back...
