I have an area with about 10 brown houses specifically there to make sure that there's always something for someone to tap. I also avoid low rent buildings, because they repop quickly, I don't get as much money from tapping them in my own town, and visitors always get the same amount no matter what so no foul there. :) I also leave Kwik E Marts untapped, the Simpsons and Flanderises house and a few others untapped.
