I can see both sides to this issue. Town is getting really large and not everyone has the time to tap every building individually but there are many players like myself who enjoy taking the time to collect from each building.
So maybe the solution is to incorporate a collect all button but have a checkbox in the options area to show or hide the collect all button depending on the player's preference?
