I agree with the OP, but I think it should only be an option once players hit level 50 or so. It should also be an option, to use or not as one chooses. That way, traditionalists could still tap as much as they liked, and others could use the "Collect All" button.
If EA wanted to do a one-time donut charge for this (a reasonable amount), I would happily pay it.
