In my main town I have 2500% bonus and max cash so I can make donuts anytime. I decided to make a collection out of those tokens. The Gil deal is coming up, I'll spend on that.

Do donuts earned from changing land tokens actually stick? Don't want to trade them all, only to come off the game and lose them all.

there was only a short period of time that you could amass extra land tokens. They changed it to only give you enough to purchase the land you had left. Then the GGR changes to cash reward. If you do have tokens to sell, they should stick.
