air server sucks... tried this one and it has lots of freezes. also requires a second program to record your screen.
good video quality can be gotten from reflector. though it has a huge lag in audio, approx 5 seconds. but if audio isn't needed, then this one is pretty good.
if you have a jailbroken device, then screenrecorder is another good option. but i don't know how it compares to reflector.
