Here's how it works:
Most buildings in Springfield pay out a reward of some kind (money, experience points) on a timed basis. When a building is ready to pay out, an icon (dollar sign, stack of cash, other) appears above the building. Until that icon is tapped, and the reward collected, the timer for the building's reward is inactive. When a neighbor visits your Springfield and taps a payout icon (dollar sign, stack of cash, gift card, whatever), they get some money, some XP, and possibly some gift cards and the timer is now restarted. In *your* Springfield you can tell which buildings have been tapped by neighbors by the handshake icon above the building. Neighbors do not see and can NOT tap that handshake, but after the building's regular timer has run there will be another regular icon visible to them when visiting your town. If another neighbor then taps that building, they effectively erase the previous neighbor's handshake and replace it with their own. The only exceptions to that rule are the "glitches" that is referenced in many other threads about having multiple handshakes (and multiple rewards) stacking up on some specific properties -- the ones I know about are the Squidport tile, Cletus' farm, and Channel 6. For those properties, a neighbor tapping the reward does not erase it from the view of other neighbors which is what happens with normal property rewards.
Here's what you should do:
In your own town, when you see a handshake icon, tap it in order to collect the reward. That does NOT remove any reward from your neighbors, or prevent them from tapping a reward once the building's timer finishes. But that IS the only way for YOU to get a reward from those tapped properties. If you don't' tap them, you get nothing.
If you want to take advantage of the glitch mentioned above, just don't tap the first / bottom handshake ... let multiple handshakes stack up, then tap them all EXCEPT for the last one in order to keep gathering rewards without waiting for the regular timer to run on those properties.
