It's happening to me aswell. I was really going to commit to creating custom rosters this year and I bought the Deluxe Edition.
The first time I played it worked fine, I created 20-30 players then created some teams. The day after I can no longer enter Create a Player at all without it crashing immediately.
I tried to remove the created players from my custom teams, I tried to hard reset my Series X and even tried to reinstall the game but nothing helped.
The crash is probably caused by you creating a player and having that on a created team. So if you're going to create players and have them on your teams, try to create all the players first. Or you can wait for EA to probably fix the bug.

You are right- I removed my created players from my created team and put them in a NHL team and it works fine now…

Right? If you have many custom teams, just put the created players on something like an NHL team. When every player is created and you're done, move those players to your created teams and you're good to start playing franchise or whatever. Works just fine when I tested it.

I think you are onto something here- because I created 18 skaters and it worked fine as I put them on the Predators- the minute I created a team and added them that’s when I got crashes- going to drop them from my created team and see what happens..

Is that what happened to you aswell? I might try to restart everything allover again but I don't know if there are any other things you need to avoid to make sure it doesn't crash.
