Whenever i finish a mission with a challenge and want to move on to the next challenge, my map doesnt show any new challenges. Only the ones i‘ve already completed. To fix that, i have to restart the game every time which is annoying.

ya i have exact same thing. waiting on a fix without restarting
This is a persistent bug that's been happening for months... It also effects new fast travel spots from appearing until after a restart...
