Since new update 8/8/24, I can no longer resume my sims knitting projects. I can see them in the game, but it doesn't add to queue after clicking on them. It also does not do anything when you try to "frog" the started knittting projects?

It's a known problem. See the bug report at EA Answers and leave a Me Too on the first post. I don't think there's anything you can do about it right now, except avoid the large projects that take more than one sitting.
