By removing the tap strafe you strongly render the game and kill the interesting side of the gameplay. Initially, Apex Legends grew out of Titanfall, an incredibly dynamic and INTERESTING game, especially thanks to the many mechanics that players could train and get better. This is a strong motivator for the game - to become better, to build up your skill. Without this, Apex Legends will be a more boring shooter game.
Removing this mechanic will not make anyone better - top streamers will leave, players will generally lose interest, as the game will become noticeably more boring and easier. This will not balance the PC and console players, because the console has an aim assist that is very strong in gunfights, and which PC players do not have. And so PC players have the opportunity to replay players with gamepads in their own way. It's a balance.
It's a strong mechanic, but it also takes a lot of practice. Therefore, it is absolutely logical that this is relevant in esports, because this is a battle between the strongest teams and players. These people initially began to train because they felt that there was room to grow and that it was interesting. It is these skill-dependent features that make the game interesting for professional players, and also make it possible for apex legends to be e-sports, otherwise it's just a game about "press forward and left mouse button". It is not interesting.
There is no need to simplify the game, because such distinctive skill-dependent mechanics make it interesting and motivate many players, especially top streamers, to play.
