I was wondering this too. I did a lot of damage to shields, breaking them often, but at the end it only shows a total of about 100-190 damage dealt on average
Apex has glitches. One of which is it can't even count damage dealt correctly. I mean really how hard is that respawn, wtf! I just now played a game and I did over 1000 damage with the Kraber, no knocked down enemies they were all standing, and at the end of the game I had 494 damage, less than half! I hit with the kraber 8 times 2 of which were headshots and did another 300 or so damage with other weapons. Again WTF!!!!!!!

I'm assuming you have hit numbers turned on....
Let's say you get a flush Kraber headshot.....
Your in-game indicator will show you what it hit for, this case (and i don't remember exactly here) showing you you did 325(?) damage.
If the target you hit only had 1 HP left....the after screen will show you that you did 1 HP damage.
Think of it as "potential vs actual" damage

Another thing to remember with the kraber is that you can hit a 326 headshot, but your enemy can physically only have a maximum of 200 hp. So that headshot only actually awards you 200 damage dealt on the knock if your enemy was wearing a purple bodyshield, obviously even less with lower shields.
