I am downloading apex legends right now but the game update rolls out tomorrow. Will i have to download game from beginning due to update?

Good question, in short: No.
You'll have only to install the additional content that has been added if you finish the installation today. It's most of the time a big update but you will not have to download the whole game from the beginning again.

You can always pause the download and resume whenever you want, if the new update rolls out, it will automatically be added to the download queue.
You still have 23 hours until the new season launches so take your time. 🙂
