You can see and select the server in session-2 (on console as well).
Check it out...it's on first screen after you start your game (before you press X on PS4, left click on PC, not sure what button on xbox).
Note:
Once you already in the game (character screen), if you want to change, you have to close & re-open the apex game or restart the console.
The list doesn't do much good when all the servers are trash.
