If i unlink my old xbox account from my ea account and link new xbox account to my old ea account will i have my progress in apex?

If you unlink one Xbox account, you won't be able to link a different one to the same EA account. Each EA account can only have one account from each other platform linked over its lifetime, so there really wouldn't be a way to transfer your progress from one Xbox account to another I'm afraid.
