Unlinking ea account from ps and relinking a new one
If I unlink an ea account from my PS account and relink a new ea account will my apex legends progress be reset?

This I would suggest you ask support for.
In theory PC and PS has two different accounts with different progress, but seen as one because of linking. I would however take the time to actually contacting support with this one, especially if you spent your time building said account 😉
There are also some ToS restrictions when it comes to "moving" accounts around that can be smart to check out before getting to creative 🙂
