I see you have enabled the correct permissions in your EA Account and the friends aren't showing up when adding them through Apex Legends.
You could perhaps try adding them on your EA Account that's linked to your Nintendo Switch account.
To do that, you will need to log in on EA App using a PC/Laptop/Mac and add your friends through EA App. The friends on your EA App list should automatically show up in the game, so perhaps that's a way to fix this.

@EA_cuervo quick question if my Ea username is different than my Nintendo nickname, is it normal for my nickname to show up in game instead. I wonder if maybe my Ea account and my switch account got really screwed up by Ea and that's why these features don't work.

Your EA Account username does not have to be the same as your Nintendo Switch username. However, it is important that both accounts are correctly linked. To check your linked account, please see: Linking your platform accounts to your EA Account
