Solution that worked for me:
Go to your main drive, find system32, find easyanticheat (.sys or .exe) and add that as a safe program to your windows defender.
It seems to be the easyanticheat software that gets thoroughly investigated every time it starts up, might be because it needs access to so much of your computer.

UPDATE to my previous answer.
While it seemed to have been fixed for me after doing what I said, it has started being a problem again yesterday. Excactly the same as before. CPU spikes super high for a few minutes when loading up Apex and lags the whole PC out.
