Keep both! I tend to use 3rd person to doge stuff, and sometimes in cockpit to aim / drop bombs better, but I could do it all in 3rd person, plus cool to see your vehicle esp if you have a kewl skin. I remember in BF-6 the Viper does this cool vapor cloud if you fly fast and dive and pull up quick, and you can only see it if you're in 3rd person.
