AI Based Anti Cheat

I'm not an expert but why couldn't Dice use an AI based anti cheat?  It could evolve itself to constantly be changing how it detects cheats.  It could self improve and learn what to look for in a player cheating.  It could constantly be monitoring the servers and watching players game play to determine a probability percent of cheats.  Anything over a certain percent and it could take immediate action and enforce a ban in real time.  Anything below a certain percent it could forward to human employees for further review.  It would unstoppable.  It could change and adapt so fast no cheat programmer could keep up.  Most the cheat programmers are normal programmers by day but do cheat coding as a side gig.  It usually takes them a while (couple weeks for AA) to write new code when a patch has been released to detect cheats better and find a work around.  The system works because EA is even slower to release updates against them, but with an AI anti cheat it could constantly be improving by the minute.  It would be next to impossible for the cheaters to keep up with.  They would be being detected so fast and removed so fast they'd have almost zero impact on gameplay.  I really don't understand why gaming companies don't take advantage of this technology?  Maybe it's just to costly or wouldn't work well for it?
