Have you tried deleting the saved game data for Battlefield 1? This will delete all your saved settings and campaign progress, so make a backup before deleting in case it doesn't fix the UI update being stuck at 0% and 97%.
On PC the UI update is saved in the Settings folder. Maybe it's the same for PS5.
