Yes assist counts as kills do go towards those challenge kills needed to unlock the Martini-Henry Sniper as mentioned by @spitfiresiemion

As it's been already mentioned above, YES the "Assist counts as Kill" do count for the Kills you need to get.

And if you're really wondering about that, you can simple check it in-game.
If you just get "Assist counts as Kill" and die after that, check the progress circle under "Weapons" if the % shows more then.
Otherwise also in the main Menu you can see how many kills you got already. And if you did a "Assist counts as Kill" it should show one more.

Indeed it counts as a kill, it would be relatively complicated to make the 300 kills without assist kills.

Could be, if you only go for body shots and hope for the sweet spot bonus. 😉
