I just experienced this for the first time, year 5 or 6 on my dynasty and never had it happen before. I'm afraid to continue in case the recruits are not on the roster, but I have a feeling even if they fix it the dynasty is screwed...
Typical freakin EA. Drop a patch that instead of fixing the core problems in the game, creates new game breaking ones instead.

Yeah, this is game breaking. Not being able to move the positions for potentially 35 of your 85 players or see what position the game assigned them to before the cut screen doesn't work. You need to make sure you meet position minimums, not to mention that it makes athletes pointless if they can only be assigned to the position the game says.
are you guys staying ATHs recruited are not showing up at all on the rosters or just not in position changes?
In National Signing Day phase of offseason incoming recruits do not show in the Position Changes menu. Unable to progress dynasty and unsure what will happen to ATH players after advance.

Exactly, spend all that time recruiting a class to then have no ability to dictate how you use them. I am not sure what happens with the athletes either, do they not show up on the depth chart? Do they let you play them at any/every position? How can they progress without an archetype to have skill buckets for? My dynasty is on a complete stop till this is fixed.
- @TheRevengeance You can see your athlete recruits and change their position if you don't filter by position and just work down your full roster list. You will see them listed as an ATH, that's just not an option on the filter/drop down.
- @dutchdynasty27 For ATH they're shown in the full list of players at Position Changes, there just isn't a filter for ATH. Go to the full roster view and scroll down and you can find your ATHs.
Are all recruits missing or just the ATH? You can find the ATH if you sort by position (at least you could before the update). What I'm asking is: f you recruit an LT but want to move him to LG, is that LT recruit not there?
