I thankfully got decently far into an offline dynasty before these issues pop up. I won't repeat it all as you covered the relevant details pretty well already.
It does seem to me that specific games get janky--re: if I sim past a given game, it typically will let me move on.
The weird "fix" I've come across (I'm on Xbox Series X) is that if I save my dynasty as a new filename once the crashing at the quarter starts up for a given game, it seems to go back to normal. If not for good, at least for awhile.
Super frustrating and it was just a (no pun intended) Hail Mary on my part trying to get my dynasty to work. Tried it because I discovered I could play through games normally on different dynasties and figured what the heck.
