I bought the Steam version about 1 week after the release and Coach Mode overall was more realistic and enjoyable than it was before this 18 GB monstrosity that EA forced on us last week. I'm not seeing all of the issues you posted (yet) but some of them have been there since launch, like Kickoff & Punt Returns. I use Supersim fast for returns because it provides realistic results although there are no animations.
EA totally killed Offsides for the CPU for some reason with the lastest patch. It's not as if there was an exploit using the fake snap button.
I did see a blocked FG playing yesterday.
Also seeing a lot of unblocked defenders, even though EA says it was addressed in the latest patch.
It's too bad we don't have the option to revert back to previous versions of the game. It was far from perfect but way better than CFB 27 in it's current state.
