I guess he was talking about the older C&C/RA games. The DOS versions should run just fine under DOSBox. In order to have the games in windowed mode, all you have to do is edit dosbox.conf like this:
fullscreen=false
windowresolution=1024x768
output=overlay

I sincerely doubt it. The Ultimate Collection doesn't contain the DOS versions of the oldest two games.
If you're indeed talking about the first two games, I advise you to install the unofficial patches; they add windowed mode. Heck, you're better off installing them anyway. Command & Conquer 1, Red Alert 1 and Tiberian Sun have all been upgraded with community-created unofficial patches that fix a lot of their bugs and compatibility problems. You can find them here:

Tiberian Sun and Red Alert 2 actually support windowed mode by default, with command line parameter "-win", but only in 16-bit colour mode. In Win10 this is listed under the executable's compatibility options, but in earlier OSes you actually need to change your desktop colour depth to run them that way. It is possible that the unofficial TS-DDraw patch fixes this issue. For Tiberian Sun I believe the aforementioned patch contains it. For Red Alert 2, you can get this by installing the CnCNet installer for playing the game online.
For the other games, they accept -w or -win command line parameters. You can set such parameters in the Origin game properties, however, the launcher programs included in The Ultimate Collection often don't correctly pass on such parameters to the game. To get around that, install Bibber's fixed game launchers.
