Dead Space on Steam does not require an attached EA account to launch, which you can verify by the lack of the third-party DRM requirements listed on Steam itself as outlined here.

This means you should be fine to pick up and play Dead Space through Steam directly as it wouldn't check or connect to your EA account in this case.
