I looked into the saves on PlayStation and even went to the team to test. I tested it, and they tested it. Unfortunately, I could not repro it.
From what we all gathered on this one, if that save is gone, and it is not uploaded to the online storage management, unfortunately, there isn't a way to restore saves because this title is an offline game.
However, there are some steps you can try that may help out.
Reinstall game - Which most have already done
Check online Storage Management
Back-up and Restore Saves
Restore Deleted Saves
