Im having trouble requesting a refund because my purchase doesn't appear on my purchase history because I used the steam overlay. I've cancelled it on steam and I haven't been refunded yet. What should I do?

If payment was made to Steam, then you should contact them regarding a refund. However, if the purchase was made through EA, then you should be able to open a case via https://help.ea.com/en/customer-care/.
If you're not sure who was paid, check "Order History" on your EA Account (it's in the "Payment and Wallet" section when you're logged in to your account at ea.com). If the purchase doesn't appear there, then it would most likely have been made through Steam.
When I tried to refund on steam, they can't refund purchases made in game then told me to contact the publisher. I used the EA live chat then got rejected because they say they can't do anything about it and should ask steam for support 😔
Have you checked with your bank to confirm the company the payment has been made to? It could also be that, as you cancelled the purchase, no payment was taken, so there's nothing to refund. You should be able to confirm that with the bank as well, though.
