Bypass creating a team
Hi. I want to just be able to jump into a car and run a race at any of the tracks. Is this something that can be done or do I always have to be in a season or create a team? Thanks.

If you just want to run a race you can do so through the grand prix mode.
If you want to do a career without having to create your own team there is the driver career mode that lets you play as one of the existing teams.
