Absolutely, you can use the same EA account for FC 25 on your PlayStation 5. Some things to be aware of:

When it comes to the Web App, you'll be able to access it with your account, but early access would only be for your PC account.
To start using the Web/Companion App with your Ultimate Team on PS5, you'll need to play the game on your new console first.
Also as it's a fresh start on PlayStation, you won't have the "Founder Status" or receive the returning user rewards on PS5. Those perks carry over only between consoles of the same family, like PS4 to PS5.
