Just wondering, but are you playing with assisted or precision shooting? If it's precision it could be down to marginal errors, and with either it could be down to pressure from an opposing player.
When finishing you also have to take into account that if someone is using advanced defending and they use the X or A button depending on controller to apply a bit of pressure to your player, it can change the shot trajectory. It's often an overlooked factor but can play a big part in finishing ability, I've often managed to make an opponent miss with a little barge or pull of a shoulder.
I didn't make any changes to the gameplay. Do you know what the default is?
I understand that if the player presses or pushes a little then the ball will go out. I'm talking about one-on-one situations or a finesse kick where the ball generally goes towards the offside and not towards the goal at all.

As far as I know the default is assisted. Precision takes a bit of getting used to though, so you may want to practice with it for a while if you choose to change it and use it. It could also just be the wrong shot type for the situation, but generally Finesse and low driven are OP shot types. Though I'm not sure if there has been any change to assisted shooting with the Holiday patch.
Generally, I would think if they removed keeper movement they would reduce the effectiveness of assisted shooting, but you never know with EA.
